Let Them Eat Grass

“It's a small, profitable business,” Mr. Shinn said. “We make money, the farmer makes money; it's organically built. We think it's a viable concept.”

Through grass-feeding, Mr. Shinn's cows promote a process called carbon sequestration, the provision of long-term storage of carbon in soil and organisms, so that the buildup of carbon dioxide in the atmosphere will lessen or slow.

The cows put back more carbon than they take in, he said.
