Well, who better to ask than the Einstein of cow behavior, Dr. Temple Grandin?
Since my missus corresponds occasionally with Dr. Grandin, I asked her to run the video by the good doctor and get her opinion. We got the reponse today and she wasn´t surprised:

...I once saw a herd of heifers standing in a circle around a woodchuck, which is a furry animal the size of a large cat. They were very curious and they sometimes moved towards it.

Animal Planet confirms that happy young cows in their element (lovely pasture) are very playful. Herds of heifers have also been known to gang-up against coyotes, taking good advantage of their numbers to ward-off small predators.
Mystery solved!
